Summer Corn Salad

This Summer Corn Salad is my favorite side dish to make when the temps start to heat up! The corn is sweet, tomatoes ripe and I pretty much like avocado in everything!
It is great as a side dish accompanying anything grilled, like chicken, fish or a burger, but can also be made as a main dish if you double your portion and add a protein like grilled shrimp or diced chicken right to the bowl. This is a great salad to take to an outing, but add the avocado last minute to prevent browning. (the lemon juice does help keep it from browning too much) If you are following Weight Watchers, this recipe has 4 points per serving. You will make this easy salad over and over again! Summer Corn Salad

This Corn Tomato Avocado salad is summer in a bowl! The perfect side dish with anything you're grilling, or double the portion as a main dish.

Ingredients
  

  • 1 cooked corn on the cob (just kernels)
  • 5 0z diced avocado from 1 medium
  • 1 1/2 cups diced cucumber about 3 small or 1 1/2 large
  • 1 cup halved cherry tomatoes
  • 2 tbsp diced red onion
  • 2 tsp extra virgin olive oil
  • 2 tbsp fresh lemon juice from 1 medium lemon
  • 1/4 tsp kosher salt
  • fresh black pepper to taste

Instructions
 

  • Toss all ingredients together and serve immediately. Enjoy!!

Notes

  • Grill the corn for a smoky flavor.
  • Add fresh herbs such as basil or chives.
  • Grill some chicken and shrimp and toss it together for a main dish.
  • To make this keto and low-carb, omit the corn and double the other ingredients.
