Air Fried Artichoke Salad with Lemon Parmesean Dressing

Have you ever tried air frying artichokes? They are SO good eaten on their own, or in this case added to a delicious salad with an amazing tart and cheesy dressing.

This salad is another easy one to throw together. A favorite of mine, as it comes together in about 30 minutes! I found this recipe on kathleenashmore.com or on Instagram as @kat_can_cook. She has the most amazing salad recipes! This is one of her most viral salads on TikTok and Instagram. This salad utilizes canned artichokes that become so deliciously crispy when air fried, then dressed in a lemony, cheesy dressing. Holy cow, it’s so good!! This is a great salad for a crowd, or for travel since it is made with raw brussels, it holds up well for a while (even overnight).
A few things may be substituted in this salad:
1. Don’t have canned artichokes? You can use frozen, thawed. Just make sure they are dried out well.
2. Feel free to blanch or roast your brussels if you don’t like them raw!
3. Don’t care for brussels at all? Substitute kale or shredded cabbage.
4. The recipe calls for white beans (cannelini are best). But you can replace with chick peas instead.
5. White vinegar can be replaced instead of lemon juice.
6. Don’t have an air fryer? Crisp the brussels in a saute pan or use a convection oven.
Either way you make this gluten free salad, you will enjoy it!! It is very hearty and satisfying.

Air Fried Artichoke Salad with Lemon Parmesean Dressing

This air fried artichoke salad is bright, fresh, hearty and covered in a tart and cheesy Lemon Parmesean dressing.

Ingredients
  

  • 2 cans aritchokes in water drained
  • 2 cloves garlic minced
  • extra virgin olive oil
  • kosher salt
  • fresh cracked black pepper
  • 6 cups brussels sprouts
  • 4 stalks celery diced
  • 1 can white beans drained
  • 1/2 cup fresh parsley chopped
  • 1 small shallot minced
  • 2 tsp dijon mustard
  • 1 lemon juiced
  • 1/2 cup parmesean cheese grated plus more for topping

Instructions
 

  • To make the Air Fryer Artichokes:
  • Pat drained artichokes well with a tea towel (or paper towel), then transfer to a bowl.
  • Toss the artichokes with minced garlic, one tablespoon of the olive oil, 1/4 teaspoon salt, and a few cracks of black pepper.
  • Transfer them to an air fryer basket and air fry at 400 degrees F for 15 minutes.
  • Once they are crispy and browned, let them cool for a couple minutes then slice in half. Reserve.

To Make the Dressing and Salad:

  • In a glass jar or bown, combine the minced shallot, dijon mustard, parmesean cheese, lemon juice, 1/2 cup extra virgin olive oil, 1/2 teaspoon salt and 1/4 tsp black pepper.
  • Whisk or shake to combine.
  • Shave the Brussels sprouts thinly on a mandoline, or use a very sharp knife. Or place halved brussels into a food processer. You can also buy them preshredded at the grocery store.
  • Add these to a large serving bowl along with the white beans, celery, artichokes and parsley.
  • Pourt the dressing over the salad and toss to combine.
  • Top with a little bit more parmesean, if desired, and serve.
